Grilled Orange Chicken with Mango Salsa
This vibrant recipe is easy to make, and adds a wow factor to any dinner table! We mention to cook chicken in your preferred method, as every stove and grill is different. If baking chicken first, make sure there is at least 1in of moisture in the baking dish. If solely grilling chicken, make sure not to over char the flesh.

Grilled Orange Chicken
  1. Whisk 3 cups of orange juice, lime juice, grated ginger, minced garlic, and smoked paprika together.
  2. Sprinkle cleaned chicken breasts with sea salt & black pepper, and put into a ziploc bag. Pour in orange juice mixture, close bag, and make sure to coat the chicken with the marinade. Place in fridge for at least one hour (overnight is better).
  3. Grill chicken using your preferred method. We choose to bake chicken in covered dish for 35 min (gas oven on 175°C), making sure to pour remaining marinade in the bag over the chicken. We then grilled the chicken on our cast iron stovetop grill to give it a bit of char on the outside. Chicken can just as easily be grilled on a gas or charcoal grill. *Work on salsa while chicken is cooking.
  4. Plate Chicken, and top with mango salsa! Enjoy!
Mango Salsa
  1. Combine chopped mango, onion, lime juice, olive oil, and chilli into a bowl, and mix.
  2. Add chopped coriander last, and season with sea salt & black pepper to taste.
  3. Top chicken with salsa, and enjoy!
