Plantain Bites: With Coriander-Lime & Mint Dipping Sauce
Make sure the plantains are yellow with black marks on them. This ensures ripeness! Check out your local international food market for great deals on plantains! If you’re really feeling adventurous…once the bites are assembled, place them on your grill to give them a grilled look (for about 5 minutes, not on direct fire/heat)!

Instructions
  1. Heat your oil, or fire up the grill. Fry or grill your plantain slices until they are a golden brown (both sides).
  2. Remove excess oil from plantain slices with paper towel
  3. Add onion, avocado, plantains, and lastly pineapple to your toothpicks
Sauce
  1. Work on the dipping sauce while the plantain slices are frying, but keep an eye on them, to prevent burning
  2. Juice half of your lime, and shave off a teaspoon of lime skin for essence.
  3. Whisk lime juice/essence, lemon juice, sea salt, pepper, and minced garlic together.
  4. Stir in coriander and chopped mint leaves. Stir well.
  5. Drizzle bites with sauce, or serve on the side.
