Through food, they opened up their home, their culture and their hearts to us. At the end, we felt like family. 🍴 When we were approached by Uncle Ben’s, who now make a range of easy-to-make rice products, to create a recipe based on one of their products, we knew we wanted to share the experience with friends. 🍴 For this recipe, we used the Uncle Ben’s® Special Lemon and Thyme Rice and created a special marinade using vinegar, minced garlic and olive oil. With some salmon to complement the base dish, within half an hour, we had a meal and an eager group ready to enjoy it. We both grew up seeing Uncle Ben’s brand featured in commercials. I was always attracted to the bright and vibrant colours the brand used, plus it was one of few brands that advertised it’s African-American founder’s roots. With this in mind, we were excited to work with a brand that we both have such a personal connection to.

For this rice pilaf recipe, we used the Uncle Ben’s® Special Lemon and Thyme Rice and created a special marinade using apple cider vinegar, minced garlic and olive oil. Instructions
  1. Add vinegar, minced garlic and 2 ½ Tbsp of olive oil to a closed jar or container. Vigorously shake for five seconds.
  2. Add chilli flakes and ginger powder to the mix, and shake for another five seconds. Set aside.
  3. Heat stove top to medium high heat, and saute chopped onions in ½ tbl of virgin olive oil until lightly browned on the edges.
  4. Lower heat to medium and add rice from the packets, and gently mix.
  5. Evenly pour marinade throughout the rice, and stir; making sure marinade is evenly distributed. Cook and stir for an additional 1 ½ minutes.
  6. Add two dashes of sea salt to taste
  7. Turn off heat. Stir in pomegranate seeds and parsley. Use a fork lift the rice for optimal fluffiness before serving.
