Rice Pilaf with Pomegranate & Ginger Vinaigrette
Great recipe for group meals, or adjust the ingredients for a dinner for two. Using a combination of simple and fresh ingredients, your dinner table will thank you!

Instructions
  1. Add vinegar, minced garlic and 2 ½ Tbsp of olive oil to a closed jar or container. Vigorously shake for five seconds.
  2. Add chilli flakes and ginger powder to the mix, and shake for another five seconds. Set aside.
  3. Heat stove top to medium high heat, and saute chopped onions in ½ tbl of virgin olive oil until lightly browned on the edges.
  4. Lower heat to medium and add rice from the packets, and gently mix.
  5. Evenly pour marinade throughout the rice, and stir; making sure marinade is evenly distributed. Cook and stir for an additional 1 ½ minutes.
  6. Add two dashes of sea salt to taste
  7. Turn off heat. Stir in pomegranate seeds and parsley. Use a fork lift the rice for optimal fluffiness before serving.
