Yes, the title says “with a TWIST!” So what can that twist be? If you’ve been following our recipes over the last several months, you would have noticed our recent fascination with Arepas. We’ve paired several different flavours together over a bite-sized, round disc; which is a gluten & dairy free mini arepa, as we lovingly call ‘arepalitas!’

One month ago, our neighbours invited us over for an evening of dinner and drinks. We chatted briefly about what we wanted to bring, but ruled out anything with more than 6 major ingredients.  We planned to do a few different fruit Salsas, and homemade tortilla chips, but the week whizzed by, and the evening get together came knocking with force.

The Salsas would take about an hour to make. We just needed to bring over something relatively easy to make, with a great taste factor!  There was also the added bit of fun pressure, seeing as our neighbour is a Cordon Bleu trained chef with roots in Mexico and Spain. However, with only 30min carved out of our day to make something (and then get across the hallway on time), we opted for a mix of quickly purchased store ingredients, with the highlight being the homemade arepa discs- which took only fifteen minutes to make!

We kept imagining the smoky flavour of salmon over hummus, topped with the smallest dollop of Moroccan (spicy) harissa sauce. This, all over a crispy, corn based arepalita. Yes, a crazy, fusion of simple flavours! However, we all scarfed it down. The ingredients can be picked up at any local supermarket, however, not all stores carry PAN (white maize flour). Here in the UK, Tescos carries it, as well as Amazon. We've linked to this above!

Instructions
  1. Mix the salt and olive oil into the lukewarm water
  2. Slowly pour water mixture into the PAN flour, and mix it by hand (it's messy, but you have more control over the consistency). The final dough should not be too dry or too wet.
  3. Separate dough into small balls, and shape by hand into discs, Place on waxed paper, or aluminum foil.

  4. Heat oil in a frying pan, and place discs in the pan. Frying on each side until a crispy, light brown.
  5. After removing Arepalitas from pan, place on oil absorbing towel, and let cool.
  6. Top with a spoon full of hummus. Tear strips of smoked salmon, and fold neatly on top of hummus.

  7. Place a small dollop of harissa sauce (to taste) on each one. Use small pieces of cut chives to decorate (optional)
