This sweet potato & fish curry packs quite a punch! It’s definitely influenced by our travels to South Asia, with that Pan-African twist we always like to add. Honestly, how can you go wrong with sweet potatoes and curry? I grew up eating sweet potatoes, so incorporating them into any dish is such a treat for me. Plus it’s gluten and dairy free, so it’s great for food allergy sufferers looking for a hefty winter dish!

Please be prepared for leftovers. The curry is easily frozen and defrosted, so no worries if you can’t quite eat it all. As it’s a very hearty dish, it’s perfect for those chilly winter nights! Dig in, and enjoy!

Prep
  1. BOIL sweet potatoes until softly firm (10-15min). Remove the skin, and cut into cubes
  2. WHILE potatoes are cooking, heat 1 tbsp of oil and lightly saute fish for 2.5 minutes. Season fish lightly with a dash of salt & pepper. Set fish aside for use later
Curry
  1. START with your curry base. Heat coconut oil, and mix spices in the oil, lightly simmering for a few minutes. Spices: Curry, chilli, garam masala, smoked paprika, turmeric, ginger powder. Make sure not to burn!
  2. ADD can of coconut milk & stir. Sample, and season to taste. Add garlic salt in and stir well.
  3. ADD can of chopped tomatoes & 3/4 cup of vegetable stock. Stir well, and let simmer on very low heat.
  4. ADD fish mix into the sauce, let simmer for 2 minutes.
  5. ADD veggies of choice into the sauce, and let simmer.

  6. ADD a few pinches of chopped coriander, and mix in.
  7. Curry sauce is finished, and ready to serve. Pour over your favourite rice or quinoa. I love topping it over my coconut coriander rice. Recipe on that coming soon! Garnish with remaining coriander! Enjoy!

Recipe Notes

Wondering about the fish mix? I used a mix of haddock, cod, and salmon. I then added some juicy prawns to give it just a little more chunky punch. Also. sometimes I like to add chilli infused olives, so feel free to try it out. I love olives, so don't mind me!
