Mango-Curried Rice is the new black…that is when you add in a delicious portion of black rice! We’re taking you to the spice island of Zanzibar with this recipe. After chatting with our friend Aiysha (a tour guide, who also teaches cooking classes), we decided to put our own twist on the ever popular Zanzibari rice and curry. Of course we had to add in our favourite fruit of choice; which just so happens to be a staple fruit on the island.

Curry is a dish enjoyed at any time of day in Zanzibar. Due to the island’s historical past, there are a myriad of dishes which fuse African, Middle Eastern, and South Asian flavours seamlessly. After collecting various local spices, and spending time on both the East and West coasts of Zanzibar, we’re excited to bring you this adventurous creation!

This recipe is perfect for get-togethers, and will be the highlight of any party! Make sure not to confuse black rice with wild rice– they are completely different textures. In the UK, we bought our black rice at Waitrose, however, it can be found at several stores and independent sellers. In the US, you can find black rice at Whole foods, and at online sellers like Vitacost. We’ve developed the recipe to feed a large group, or for dipping into endless leftovers. You can halve the ingredients if you’d like to make a smaller portion.

Make sure to carefully read the boiling instructions. Black rice takes longer to cook and break down (ours took 30 minutes). Subsequently, over or under boiled rice is not very exciting. Another plus to consider with black rice, is that it is rich in antioxidants like vitamin E and anthocyanin (it has more than blueberries), so it ticks the box on the more healthy side of global rices.

Ingredients

Instructions
  1. Boil black rice in salted water (make sure to pay attention to boiling instructions on package). Stir a few times whilst boiling. Drain any excess water and set aside.

  2. Chop: While rice is boiling, chop red onion, bell pepper, mango, and coriander. Set aside in separate containers.
  3. Marinade: Combine olive oil, apple cider vinegar, minced garlic, cumin, and chilli flakes into a bowl and whisk. Whisk in ginger powder, curry powder, and sea salt into mixture. Set aside.
  4. Put rice in a large bowl. Add marinade, and stir until grains are coated well. Add in chopped ingredients, and stir well. Cover, and refrigerate until ready to serve.

  5. Plate & garnish with remaining coriander leaves. Enjoy!
