Mango-Passion Fruit Mojito Recipe | @dipyourtoesin

We hope you love this mojito twist on a drink that had us up dancing into the early hours in Zanzibar!  Succulent, sweet, mouth watering…are just a few words we can use to describe the fruit we consumed (in mass quantities) whilst in Zanzibar.

As lovers of mangoes, we almost felt like we were cheating on our beloved fruit when we found ourselves foregoing an old favourite in place of the most fragrant, mind bending passion fruit we’d ever had in our lives. Pair that with a master cocktail maker (Fakihi at Hakuna Majiwe) who took both our favourite fruits and mixed them with a local Zanzibari liquor (Konyagi), and you have combination waiting to send you floating onto the Indian Ocean, destination unknown.

This recipe is our eager nod to Zanzibar, the friendships we formed, and it’s colourful delights that only island life can serve up so perfectly. Last night, we sipped on our mojitos and dreamed of our beloved spice island.

  1. Pick 8-10 mint leaves off one stalk, crush and squeeze in hand, releasing mint oil. Add to a container with lime juice of 3/4 lime, and muddle.

  2. Add 2 tbsp of mango pieces, along with passion fruit juice and seeds. Muddle until slightly smooth.

  3. Add mixture, 1 tsp of sugar (or sugar substitute), and 3 tbsp of rum into a mixing canister (we use a coffee on-the-go canister), and shake well. *Since we couldn't get our hands on any Konyagi, we used Malibu (coconut flavoured) rum. If you want to go virgin, forgo the rum, and add a bit more juice of choice.
  4. Fill glass with ice cubes. Pour mixture into glass, and top off with tonic water and stir. Garnish with a mint leaf stalk, lime, and mango. *We used Schweppes Elderflower flavour tonic water, although any kind or flavour can be used. Now go sip away!
